Homemade Wheat Pasta

Easy homemade wheat pasta — with or without a pasta maker — ready in about 45 minutes.

Ingredients

1 1/4 to 1 3/4 cups Fyler Farms sifted wheat flour 1/2 tsp sea salt 3 large eggs
  1. Combine flour and salt on a flat surface. Make a well, add the eggs, and whisk with a fork while gradually pulling in flour. Knead until smooth and no longer sticky, then rest the dough in a disk under a damp towel for 30 minutes.
  2. Divide into 8 pieces. Flatten each and roll thin with a pasta machine or rolling pin.
  3. Cut with a fettuccine attachment or a knife into 1/4-inch strips. Hang to dry if you like.
  4. Boil salted water, add the noodles, and cook until they float and turn tender, 4–5 minutes. Drain and toss with olive oil.

Tip: No pasta machine? A rolling pin and a sharp knife work just fine.
